While I personally have read most of the late Sir Terry Pratchett's magnum opus, I have a friend who has not, and am planning to give her an introduction set.
Here are my current choices:
I get her one of the omnbus collections which consist of...
The Colour of Magic/The Light Fantastic (Logical start, but also among his weakest)
Sourcery/Eric/Interesting Times (I only consider the last one a genuinely good book)
Equal Rites/Wyrd Sisters/Witches Abroad (The first one is good, while the other two are great)
Mort/Reaper Man/Soul Music (All three are quite excellent)
Pyramids/Small Gods/Hogfather (YES! Though I'm not sure how well Hogfather flows for people who have not read earlier Death books)
Guards! Guards!/Men at Arms/Feet of Clay (Another YES!)
Alternatively, I may make my own set and buy her copies of Wyrd Sisters, Small Gods, and Guards! Guards!, as I feel those three are the strongest starter books, while not limiting her by cast.

Ended up giving her a set consisting of Mort, Wyrd Sisters, and Guards! Guards!. I really wanted to hand her Pyramids, Moving Pictures, or Small Gods, but my local bookstore didn't have them, even though they're SOOOO good. Alas...
